Ingredients
- 1 cup almond flour/meal
- 3/4 c unsweetened shredded coconut
- 2 T. cornstarch
- 1/2 t. baking soda
- 1/3 c + 1 T maple syrup
- 1 t. almond flavoring
- 1/2 t. vanilla flavoring
- 1/2 c vegan chocolate chips
Preparation
- Mix together dry ingredients in medium-sized mixing bowl.
- Mix together wet ingredients, then add to dry and mix well.
- Add chocolate chips mixing thoroughly.
- Drop by tablespoon-sized cookie scoop onto parchment covered pan.
- Bake for 6 minutes at 350 F.
- Remove from oven and pat down slightly.
- Return to oven and bake for 6 more minutes.
- Cool on the pan for 5-10 minutes before moving to cooing rack.
