Almond Raisin Cookies

Makes 2 dozen.

Ingredients

  • 1 cup almond flour/meal
  • 3/4 c. unsweetened shredded coconut
  • 2 T. cornstarch
  • 1/2 t. baking soda
  • 1/3 c. + 1 T maple syrup
  • 1 t. almond flavoring
  • 1/2 t. vanilla flavoring
  • 1/2 c raisins, diced

Preparation

  1. Mix together dry ingredients in a medium-sized mixing bowl.
  2. Mix together wet ingredients, then add to dry and mix well.
  3. Mix in raisins thoroughly.
  4. Drop by tablespoon-sized cookie scoop onto parchment-covered pan.
  5. Bake for 6 minutes at 350 F.
  6. Remove from oven and pat down slightly.
  7. Return to oven and bake for 6 more minutes.
  8. Cool on the pan for 5-10 minutes before moving to cooing rack.
