(Using fresh fruit is best!)
1 c. pineapple tidbits, drained well
1 c. mandarin oranges, drained well
1 c. red grapes, halved
1 c. diced red apples with peel
1 c. Pineapple Cream (recipe below)
Zest of one lime
1/2 c. coconut, flaked or shredded
1 c. toasted chopped pecans (or almonds)
Chill and serve.
1 20 oz. can pineapple, well-drained
16 oz. firm tofu, drained/pressed
1/4 c. honey (or less)
1/4 t. salt
1 T. vanilla flavoring
Blend until very creamy.
Delicious served on fruit salad, granola, waffles, or pancakes.
