Corn butter

Ingredients

  • ½ cup cornmeal

  • 1 cup water

  • 1 can light coconut milk

  • ½ tsp. salt

  • ½ tsp. butter flavoring (optional)

 

Preparation

  1. Cook cornmeal in water and coconut milk until thickened.

  2. Add to blender with other ingredients and blend for 2 minutes.

  3. Use hot on vegetables or bread or refrigerate until thickened.
