8 cups of whole wheat herb bread, cut into cubes.
2 cups Butler brand Soy Curls (optional) Available at some health food stores or online.
3 Tbs vegetarian seasoning or boullion
4 cups hot water
1 cup celery, diced
2 cup sliced green onions
1/2 tsp sage
2/3 cup pecan meal
2 Tbs water
Dry bread cubes in oven at 200 degrees until completely dry. (About 4 hours or leave in oven overnight).
In a large bowl, rehydrate Soy Curls, if using, in 4 cups hot water with vegetarian seasoning and sage. Let sit at least 5 minutes.
Saute' onion and celery in small amount of water until soft.
Mix together all ingredients.
Place in a 9 x 13 pan, COVER and bake at 350 degrees for 1 hour.
Serve with mashed potatoes and gravy.
