Ingredients
- 1 cup chopped onion
- 1 cup water
- 2 tsp Mckay's chicken seasoning
- 3 tablespoons tomato paste
- 3 large 28 oz cans tomatoes undrained
- 1 tsp each: salt, parsley, and basil
- 1 bay leaf
- 1 TBS molasses
- 3-4 dashes of cayenne pepper
Preparation
- Saute onions in the bottom of the pot for 3 to 5 minutes.
- Add the water, Mckays and tomato paste.
- Stir well. Add tomatoes, seasonings, molasses and bay leaf. Bring to a boil.
- Reduce heat and simmer for about 30 minutes.
- Discard bay leaf.
- Blend soup until smooth and add any additional seasonings to taste.
Optional: top with croutons.
