Grilled Vegetables

Ingredients

  • 1 pound red potatoes, scrubbed and cut into half-inch cubes (about 3 cups)

  • 2 medium zucchini, cut into one-inch cubes

  • 1 red or yellow bell pepper, cut into one-inch cubes

  • 1 purple onion, sliced

  • 1/2 pound fresh green beans

  • 6 cloves fresh garlic, minced

  • 1/2 tsp. Salt

Preparation

  1. Any vegetables can be used.

  2. Vegetables that take longer to cook, like potatoes, should be cut into smaller pieces.

  3. Lightly spray a cookie sheet and distribute vegetables evenly.

  4. Sprinkle with salt and any herbs you like.

  5. Roast in the oven at 400 degrees for 25 minutes.

  6. Stir well and continue roasting until potatoes are tender and everything is nicely browned.
