Ingredients
- 1/2 C raw cashews
- 1/3 C non-dairy milk
- 1 TBS maple syrup
- Juice from one lemon
- Juice from one orange
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. poppy seeds
Preparation
- If you don't have a high-speed blender (such as a Vita-mix), soak cashews in water for 2-3 hours and then drain the water.
- Put the cashews in a blender with all ingredients except poppy seeds.
- Blend until smooth, about 1 -2 minutes.
- Pour the dressing into a container and stir in the poppy seeds.
- Chill in the refrigerator for 1-2 hours before use. May stir in 1-2 TBS of nondairy milk if the dressing seems too thick when ready to use.
- Store leftovers in an airtight container in the refrigerator for up to 1 week.
