Potato Casserole

Ingredients

  • 5 pounds red or yellow potatoes, boiled whole until almost tender, cooled and grated

  • 1 yellow, sweet onion

  • 1 Tblsp. onion powder

  • 1 tsp. garlic powder

  • 1 1/2 cup cashews

  • 2 cups water

  • 1 Tblsp. salt

  • 1 cup Tofutti or Kite Hill almond cream cheese (Whole Foods), optional

  • 1/2 cup dried chives or parsley

  • paprika

Preparation

  1. In the blender, put everything except chives/parsley and paprika.

  2. Blend for 2 minutes.

  3. Mix this into the grated potatoes, along with the chives/parsley.

  4. Sprinkle with Paprika.

  5. Bake at 350 for 45 minutes.
