3⁄4 C coconut milk
1⁄2 C water
2 TBS yellow cornmeal
1⁄2 tsp. salt or butter flavored salt
Place all ingredients in a saucepan and bring to a boil. Simmer 5 minutes.
Carefully place in blender, cover, and turn on low, then increase to high. Blend for about 1 minute until smooth.
Pour into container, cover and chill.
