Simple Mayonnaise

In addition to using this delicious and versatile mayonnaise in potato salad, coleslaw and on burgers and sandwiches, it can be used as a base for any creamy salad dressing. Be creative! Mix with salsa to make taco salad dressing, add diced cucumber, dried dill and a little plant milk for a Mediterranean-style dressing, or add a little Balsamic, garlic and herbs for creamy Italian!

Ingredients

  • 12 oz. Silken Soft Tofu (refrigerated, water-packed or Mori-Nu aseptic packaged)

  • 1 cup raw cashews or slivered almonds

  • 1/4 cup lemon juice 

  • 1 1/2 Tbs honey 

  • 2 tsp salt 

  • 1 tsp onion powder

Preparation

  1. Place all ingredients in blender, and blend for at least 1 minute until silky smooth.

  2. Chill to thicken.
