Special Sweet Potatoes

While baked sweet potatoes are a simple treat anytime (especially when cooled and caramelized!), this simple casserole dish will easily replace traditional holiday sweet potato recipes that are loaded with sugar and marshmallows. They are sweet with just a touch of spice. Enjoy!

Ingredients

  • 4-6 large sweet potatoes
  • Equal amounts of orange juice
  • Maple syrup to taste
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 cup chopped pecans

Preparation

  1. Put a sheet of foil on a baking sheet and add 4-6 large sweet potatoes, washed.
  2. Bake at 400 degrees for 1 hour, or until the skin is a bit loose and some of the natural sugars bubble around the potatoes.
  3. Cool until you can handle them. Remove skins and put potatoes in a large bowl.
  4. Add equal amounts of orange juice and maple syrup to taste.
  5. Add 1/2 tsp. salt and 1 tsp. cinnamon. Beat mixture until well combined.
  6. Put mixture in a lightly sprayed 2-quart dish.
  7. Top with 1 cup chopped pecans and a drizzle of maple syrup.
  8. Bake at 350 degrees for about 20 minutes, until heated through.
  9. Enjoy!
