Ingredients
- 1 bunch kale, ribs removed and finely chopped (about 4 cups packed)
- 2 C cabbage, shredded
- 2 C broccoli, finely chopped match sticks
- 2 C Brussels sprouts, shredded
- 1 C chicory, chopped optional
- 1/2 C dried cranberries
- 1/2 C roasted pumpkin seeds
Preparation

- Combine all ingredients in a large bowl.
- Pour the poppy seed dressing over the salad and toss well to coat thoroughly.
- Let the salad rest for at least 5-10 minutes before serving.
