Ingredients
- 1 large onion diced
- 1 1/2 TBS minced garlic
- 4 cans (15oz) Great Northern Beans rinsed/drained
- 3 cups water
- 1 (70z) can green diced chilies
- 2 TBS Mckay's vegan chicken seasoning
- 1 1/2 tsp salt
- 1 tsp dried oregano
- 1/2 tsp dried cumin
- 1/4 tsp cayenne pepper
- 1 cup soy curls, broken In Blender:
- 1/2 (12oz) Mori-Nu Silken Tofu
- 1/4 cup raw cashews
- 1 1/2 tsp lemon juice
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1 cup water
Preparation
- In large pot sauté onions and garlic in a small amount of water stirring occasionally until softened (about 4 minutes).
- Add remaining ingredients except contents of blender.
- Bring to a boil over high heat.
- Blend contents of blender until smooth, then add to pot. Reduce heat and simmer 30 minutes.
