Cheesy Potatoes

Cut red or gold potatoes into cubes and boil gently in salted water until tender. Drain. Make cheesy sauce and pour over hot potatoes. Sprinkle with minced parsley and enjoy!


  • 2/3 cup raw cashews or slivered almonds

  • 12 oz. jar of roasted red peppers

  • 1 medium red or gold potato, microwaved until tender

  • 1 ½ tsp. salt

  • 2 tsp. onion powder

  • 1 tsp. garlic powder

  • 1 Tblsp. fresh lemon juice

  • 1/2 cup water (or more, if the cheesy sauce is too thick)


  1. Blend everything in the blender for 2 minutes, until creamy.

  2. Pour over hot potatoes, cooked broccoli and cauliflower or pasta.
