1 small cucumber, scrubbed (peeling is optional)
1 C raw cashews or slivered almonds (almonds should be soaked if you don't have a high-powered blender like a Vita-Mix)
1 small onion
1 TBS honey OR other sweetener
1 tsp. salt
3 TBS lemon juice
1 TBS dried parsley flakes
1/4 C water
Whiz in blender until smooth.
