Easy Tomato Soup
Ingredients
1 cup chopped onion
1 cup water
2 tsp Mckay's chicken seasoning
3 tablespoons tomato paste
3 large 28 oz cans tomatoes undrained
1 tsp each: salt, parsley, and basil
1 bay leaf
1 TBS molasses
3-4 dashes of cayenne pepper
Preparation
Saute onions in the bottom of the pot for 3 to 5 minutes.
Add the water, Mckays and tomato paste.
Stir well. Add tomatoes, seasonings, molasses and bay leaf. Bring to a boil.
Reduce heat and simmer for about 30 minutes.
Discard bay leaf.
Blend soup until smooth and add any additional seasonings to taste.
Optional: top with croutons.
