Easy Tomato Soup

Ingredients

  • 1 cup chopped onion
  • 1 cup water
  • 2 tsp Mckay's chicken seasoning
  • 3 tablespoons tomato paste
  • 3 large 28 oz cans tomatoes undrained
  • 1 tsp each: salt, parsley, and basil
  • 1 bay leaf
  • 1 TBS molasses
  • 3-4 dashes of cayenne pepper

Preparation

  1. Saute onions in the bottom of the pot for 3 to 5 minutes.
  2. Add the water, Mckays and tomato paste.
  3. Stir well. Add tomatoes, seasonings, molasses and bay leaf. Bring to a boil.
  4. Reduce heat and simmer for about 30 minutes.
  5. Discard bay leaf.
  6. Blend soup until smooth and add any additional seasonings to taste.

Optional: top with croutons.
