1 c. cooked millet*
1 c. hot water (or nut / coconut milk)
1/2 c. dates (13-15 pitted dates)
1 t. vanilla
2 T. carob powder (or 1 1/2 T. cocoa powder)
1-2 T. peanut butter
Optional:
1/2 t. Roma* granules (or more to taste)
1/4 c. dried coconut
Put all ingredients in blender. Blend until very creamy.
Layer with fruit in pretty individual serving dishes, use as topping for waffles, or reduce liquid slightly and use as pie filling. (Pour in baked pie crust and chill.)
Cook 1 cup washed millet in 4 cups water. Bring to boil, simmer low, and cook for 1 hour. Very nutritious!
