Mock Chicken Dressing

Ingredients

  • 8 C of whole wheat herb bread, cubed 

  • 2 C Soy Curls 

  • 3 TBS “chicken” seasoning 

  • 4 C hot water 

  • 1 C celery, diced 

  • 2 C green onions, sliced 

  • 1/2 tsp. sage 

  • 2/3 C pecan meal 

  • 2 TBS water OR 1 TBS water + 1 TBS simple butter 

Preparation

  1. Dry bread cubes in oven at 200°F until completely dry. (About 4 hours

  2. In a large bowl, rehydrate Soy Curls in 4 cups hot water with chicken seasoning and sage. Let sit 5 minutes. 

  3. Sauté onion and celery in small amount of water until soft. 

  4. Mix together all ingredients and place in a 9x13 pan. 

  5. Cover and bake at 350°F for 1 hour. 

  6. Serve with gravy.
