1 cup oat flour
1/2 tsp baking powder
1/2 tsp baking soda
Use spices you like
Cinnamon 1 tsp
Ginger 1/4 tsp
All spice 1/4 tsp
Nutmeg 1/4 tsp
1/2 cup unsweetened applesauce
1/2 cup plant milk
1 tsp of vanilla
1/4 cup maple syrup or 3-5 medjool dates
3 Tbs nut butter (Almond butter our favorite)
Preheat oven to 350°F. Mix dry ingredients in a bowl.
Mix wet ingredients in bowl or blender.
Stir wet and dry ingredients together until combined.
Spoon the batter evenly into each muffin tin.
Bake for 20-25 min or until a toothpick inserted in the center comes out clean.
Note:
For Blueberry Muffins, add 1/2 cup fresh or frozen blueberries.
For Chocolate Chip Muffins, leave out spices and add 1/2 cup chocolate chips.
For Lemon Poppyseed Muffins, leave out spices and replace 2 Tbs milk with fresh lemon juice, zest of 1 lemon, and 1/2 tsp of poppy seeds.
