White Bean Chili

Ingredients

  • 1 large onion diced
  • 1 1/2 TBS minced garlic
  • 4 cans (15oz) Great Northern Beans rinsed/drained
  • 3 cups water
  • 1 (70z) can green diced chilies
  • 2 TBS Mckay's vegan chicken seasoning
  • 1 1/2 tsp salt
  • 1 tsp dried oregano
  • 1/2 tsp dried cumin
  • 1/4 tsp cayenne pepper
  • 1 cup soy curls, broken In Blender:
  • 1/2 (12oz) Mori-Nu Silken Tofu
  • 1/4 cup raw cashews
  • 1 1/2 tsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1 cup water

Preparation

  1. In large pot sauté onions and garlic in a small amount of water stirring occasionally until softened (about 4 minutes).
  2. Add remaining ingredients except contents of blender.
  3. Bring to a boil over high heat.
  4. Blend contents of blender until smooth, then add to pot. Reduce heat and simmer 30 minutes.
