White Bean Chili
Ingredients
1 large onion diced
1 1/2 TBS minced garlic
4 cans (15oz) Great Northern Beans rinsed/drained
3 cups water
1 (70z) can green diced chilies
2 TBS Mckay's vegan chicken seasoning
1 1/2 tsp salt
1 tsp dried oregano
1/2 tsp dried cumin
1/4 tsp cayenne pepper
1 cup soy curls, broken In Blender:
1/2 (12oz) Mori-Nu Silken Tofu
1/4 cup raw cashews
1 1/2 tsp lemon juice
1/2 tsp salt
1/2 tsp onion powder
1 cup water
Preparation
In large pot sauté onions and garlic in a small amount of water stirring occasionally until softened (about 4 minutes).
Add remaining ingredients except contents of blender.
Bring to a boil over high heat.
Blend contents of blender until smooth, then add to pot. Reduce heat and simmer 30 minutes.
