Almond Raisin Cookies
Makes 2 dozen.
Ingredients
1 cup almond flour/meal
3/4 c. unsweetened shredded coconut
2 T. cornstarch
1/2 t. baking soda
1/3 c. + 1 T maple syrup
1 t. almond flavoring
1/2 t. vanilla flavoring
1/2 c raisins, diced
Preparation
Mix together dry ingredients in a medium-sized mixing bowl.
Mix together wet ingredients, then add to dry and mix well.
Mix in raisins thoroughly.
Drop by tablespoon-sized cookie scoop onto parchment-covered pan.
Bake for 6 minutes at 350 F.
Remove from oven and pat down slightly.
Return to oven and bake for 6 more minutes.
Cool on the pan for 5-10 minutes before moving to cooing rack.
