Black Beans
Ingredients
1 C diced onions
4 minced garlic cloves
4 C cooked black beans
1 C salsa
2 - 14.5 oz. cans diced tomatoes
2 tsp. ground cumin
1 tsp. chili powder
3 TBS lime juice
1 C fresh cilantro
Preparation
Sauté onions and garlic in 2 TBS of water until tender.
Add the rest of the ingredients except the lime juice and cilantro and simmer 15 minutes.
Remove from stove and stir in lime juice and cilantro.
Serve over brown rice.
