Cut red or gold potatoes into cubes and boil gently in salted water until tender. Drain. Make cheesy sauce and pour over hot potatoes. Sprinkle with minced parsley and enjoy!
2/3 cup raw cashews or slivered almonds
12 oz. jar of roasted red peppers
1 medium red or gold potato, microwaved until tender
1 ½ tsp. salt
2 tsp. onion powder
1 tsp. garlic powder
1 Tblsp. fresh lemon juice
1/2 cup water (or more, if the cheesy sauce is too thick)
Blend everything in the blender for 2 minutes, until creamy.
Pour over hot potatoes, cooked broccoli and cauliflower or pasta.
