Quick Homemade Salsa

Should make about a quart.

Ingredients

  • 1/2 small sweet onion
  • 2 cloves garlic
  • 1 small tomatillo
  • 1/2 cup cilantro
  • 1/2 jalapeno pepper
  • 1 - 29 ounce can Hunts® diced tomatoes (brand does matter!)
  • Salt to taste

Preparation

  1. In a food processor whiz the onion, garlic, cilantro, jalapeno and tomatillo together until very fine.
  2. Add the can of tomatoes and pulse until tomatoes are desired size.
  3. Stir together.

Note: Keeps in the fridge for about a week.
