Creamy Vegetable Soup

Ingredients

  • 8 cups diced vegetables:
  • (Combination of 6 cups Broccoli fresh or frozen,
  • 1 cup onion and 1 cup red pepper)
  • 1 cup water
  • 1 TBS McKay's vegan chicken seasoning
  • 1 tsp salt or to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp basil
  • 1 recipe of Cream Sauce (below)

Preparation

  1. 1 Cook vegetables in 1 cup water with seasonings, simmering until tender.
  2. For cream sauce: Place all ingredients in blender and blend on high for about 2 minutes until smooth.
  3. Add cream sauce to the cooked vegetables and stir gently while bringing to a boil to thicken, adding more water or salt as needed.
