Creamy Vegetable Soup
Ingredients
8 cups diced vegetables:
(Combination of 6 cups Broccoli fresh or frozen,
1 cup onion and 1 cup red pepper)
1 cup water
1 TBS McKay's vegan chicken seasoning
1 tsp salt or to taste
1/2 tsp garlic powder
1/2 tsp basil
1 recipe of Cream Sauce (below)
Preparation
1 Cook vegetables in 1 cup water with seasonings, simmering until tender.
For cream sauce: Place all ingredients in blender and blend on high for about 2 minutes until smooth.
Add cream sauce to the cooked vegetables and stir gently while bringing to a boil to thicken, adding more water or salt as needed.
