Delicious Holiday Stuffing


  • 8 cups of whole wheat herb bread, cut into cubes.

  • 2 cups Butler brand Soy Curls (optional) Available at some health food stores or online.

  • 3 Tbs vegetarian seasoning or boullion

  • 4 cups hot water

  • 1 cup celery, diced

  • 2 cup sliced green onions

  • 1/2 tsp sage

  • 2/3 cup pecan meal

  • 2 Tbs water 


  1. Dry bread cubes in oven at 200 degrees until completely dry. (About 4 hours or leave in oven overnight).

  2. In a large bowl, rehydrate Soy Curls, if using, in 4 cups hot water with vegetarian seasoning and sage. Let sit at least 5 minutes.

  3. Saute' onion and celery in small amount of water until soft.

  4. Mix together all ingredients.

  5. Place in a 9 x 13 pan, COVER and bake at 350 degrees for 1 hour.

  6. Serve with mashed potatoes and gravy.
