Easy Pie Crust


  • 1 cup Medjool dates, pitted
  • 1 cup walnut or pecans or slivered almonds
  • 1/2 cup unsweetened coconut, shredded
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon (optional, but good with pumpkin pie)


  1. Put everything in a food processor and process until a ball forms.
  2. Press this mixture into a 9" pie pan.
  3. Refrigerate until ready to use for a baked pie.
  4. If you're needing a baked crust for your pie, bake the crust at 350 degrees for 15-20 minutes, until lightly browned. Cool before adding filling.
