Boil 5 pounds of potatoes until almost done. Let cool in fridge, then peel and grate.
Put the following ingredients In a blender, blend until very smooth:
1 1/2 C cashews
2 C water
1 TBS salt
2 1/2 TBS onion powder OR 1 TBS onion powder + 1 medium onion sautéed
1/2 tsp. garlic powder
2 tsp. lemon juice
1 TBS nutritional yeast flakes
1 cup chopped red bell pepper, optional
Add the above mixture and potatoes together stirring carefully.
Place in 9x13 baking dish lightly sprayed with Pam.
Sprinkle with paprika and parsley.
Bake for 45 minutes at 350° F.
