Oven Roasted Potatoes


  • 2 pounds red, gold or sweet potatoes (or a combination), diced small

  • 1 sweet yellow onion or red onion, diced

  • 10 cloves of garlic

  • 1 tsp. seasoned salt or sea salt

  • 1/4 tsp. pepper, optional

  • 1/2 cup of vegetable broth or water


  1. Put everything in a sprayed 13x9" dish.

  2. Cover with foil and bake at 400 for 40 minutes.

  3. Remove foil and stir.

  4. Continue baking for 20-25 minutes until potatoes are tender and browned on top, stirring occasionally.
