New and Improved No Bake Cookies


  • 1 ½ cups old fashioned oats

  • ½ cup pure maple syrup

  • 1/3 cup unsweetened almond milk

  • 2 Tblsp. cocoa powder

  • 6 Tblsp. peanut butter

  • ½ tsp. vanilla

  • 1/8 tsp. salt


  1. Put the oats in a medium bowl.

  2. Put the rest of the ingredients in a small pot and stir well.

  3. Bring to a boil and boil 2 minutes.

  4. Stir into oats to combine well.

  5. Spoon onto parchment paper to form cookies.

  6. Refrigerate until firm. 


  1. This recipe also works if you mix everything together in a bowl and drop the mixture into cookie size mounds on parchment paper and bake for 5-7 minutes at 375 degrees.

  2. Let cool completely and then refrigerate or freeze.
