1 ½ cups old fashioned oats
½ cup pure maple syrup
1/3 cup unsweetened almond milk
2 Tblsp. cocoa powder
6 Tblsp. peanut butter
½ tsp. vanilla
1/8 tsp. salt
Put the oats in a medium bowl.
Put the rest of the ingredients in a small pot and stir well.
Bring to a boil and boil 2 minutes.
Stir into oats to combine well.
Spoon onto parchment paper to form cookies.
Refrigerate until firm.
This recipe also works if you mix everything together in a bowl and drop the mixture into cookie size mounds on parchment paper and bake for 5-7 minutes at 375 degrees.
Let cool completely and then refrigerate or freeze.
