Poppy Seed Dressing
Ingredients
1/2 C raw cashews
1/3 C non-dairy milk
1 TBS maple syrup
Juice from one lemon
Juice from one orange
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. poppy seeds
Preparation
If you don't have a high-speed blender (such as a Vita-mix), soak cashews in water for 2-3 hours and then drain the water.
Put the cashews in a blender with all ingredients except poppy seeds.
Blend until smooth, about 1 -2 minutes.
Pour the dressing into a container and stir in the poppy seeds.
Chill in the refrigerator for 1-2 hours before use. May stir in 1-2 TBS of nondairy milk if the dressing seems too thick when ready to use.
Store leftovers in an airtight container in the refrigerator for up to 1 week.
