6 large, ripe tomatoes, quartered
1 sweet yellow onion, quartered
8 cloves garlic
2 tsp. salt, or to taste
dash of cayenne
2 tsp. maple syrup
2 cups water
2 cups small, uncooked pasta
Put everything, in blender and pulse until onion and tomatoes are chopped finely.
Pour into a large pot and bring to a boil.
Reduce heat and simmer 25 minutes.
Add pasta directly to sauce and cook and stir 3 minutes.
Cover and turn off heat. Let stand 15 minutes and serve.
