Peach Crumble


  • About 8 firm, but ripe, peaches or nectarines, skins removed, chopped

  • 1 cup rolled oats, pulsed in a blender a few seconds to chop

  • 1/2 cup almond flour

  • 1/4 cup chopped walnuts

  • 1/3 cup pure maple syrup

  • 1/4 tsp. salt

  • 3 Tbsp almond or cashew butter, unsalted

  • 1/2 tsp. cinnamon


  1. Preheat oven to 350 degrees F. Spray an 8" square dish.

  2. Add chopped fruit.

  3. To a mixing bowl add crumble ingredients. Using your hands or a wooden spoon, mix until all everything is evenly distributed and crumbly.

  4. Add to the top of the fruit in an even layer and bake for 40-45 minutes, or until the fruit is bubbling and the top is crisp and golden.
