5 pounds red or yellow potatoes, boiled whole until almost tender, cooled and grated
1 yellow, sweet onion
1 Tblsp. onion powder
1 tsp. garlic powder
1 1/2 cup cashews
2 cups water
1 Tblsp. salt
1 cup Tofutti or Kite Hill almond cream cheese (Whole Foods), optional
1/2 cup dried chives or parsley
paprika
In the blender, put everything except chives/parsley and paprika.
Blend for 2 minutes.
Mix this into the grated potatoes, along with the chives/parsley.
Sprinkle with Paprika.
Bake at 350 for 45 minutes.
