Spiced Oat Muffins


Dry Ingredients to mix in bowl:

  • 1 cup oat flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • Use spices you like

  • Cinnamon 1 tsp

  • Ginger 1/4 tsp

  • All spice 1/4 tsp

  • Nutmeg 1/4 tsp

Wet ingredients to mix in blender:

  • 1/2 cup unsweetened applesauce

  • 1/2 cup plant milk

  • 1 tsp of vanilla

  • 1/4 cup maple syrup or 3-5 medjool dates

  • 3 Tbs nut butter (Almond butter our favorite)


  1. Preheat oven to 350°F. Mix dry ingredients in a bowl.

  2. Mix wet ingredients in bowl or blender.

  3. Stir wet and dry ingredients together until combined.

  4. Spoon the batter evenly into each muffin tin.

  5. Bake for 20-25 min or until a toothpick inserted in the center comes out clean.

For Blueberry Muffins, add 1/2 cup fresh or frozen blueberries.
For Chocolate Chip Muffins, leave out spices and add 1/2 cup chocolate chips.
For Lemon Poppyseed Muffins, leave out spices and replace 2 Tbs milk with fresh lemon juice, zest of 1 lemon, and 1/2 tsp of poppy seeds.
