3/4 cup raisins or pitted dates, soaked in hot water for 10 minutes, drained.
15 oz of unsweetened applesauce**
2 tsp vanilla
A little maple syrup for brushing on muffins after baking
1 cup diced apples
Preparation
Preheat oven to 375°
Add 2 cups oats, baking powder, cinnamon and nutmeg to food processor and run for a minute to mix and turn oats into flour.
Then add, bananas, raisins or dates, applesauce, and vanilla.
Process until all is well combined, then transfer to a large bowl and add remaining 2 cups of oats and apples.
Stir with spoon until it is all mixed.
Fill cups 2/3 full and bake for about 15-17 minutes. Until firm on top.
Makes 18-24 muffins.
*You can skip the cinnamon and nutmeg and add cocoa and sliced almonds.
**Or you can add pumpkin instead of applesauce. Use your imagination to create lots of flavors!
