1 cup old fashioned oats
2/3 cup unsweetened coconut (toasted, if desired)
½ cup peanut butter
½ cup ground flaxseed
1/3 cup honey
½ cup Lily’s sugar-free chocolate chips, or grain-sweetened carob chips
1 Tblsp. chia seeds
1 tsp. vanilla
1/8 tsp. salt
Mix everything together well except the chocolate chips.
Add chips and stir.
Squeeze tablespoons of mixture in your hand, rolling into compact balls.
Place on parchment paper on a plate.
Freeze. Keep in freezer until ready to serve.
They’re delicious straight from the freezer, or can be kept in the refrigerator for about a week.
These are great for long hikes or in school lunch boxes.
