No-bake Energy Bites


  • 1 cup old fashioned oats

  • 2/3 cup unsweetened coconut (toasted, if desired)

  • ½ cup peanut butter

  • ½ cup ground flaxseed

  • 1/3 cup honey

  • ½ cup Lily’s sugar-free chocolate chips, or grain-sweetened carob chips

  • 1 Tblsp. chia seeds

  • 1 tsp. vanilla

  • 1/8 tsp. salt


  1. Mix everything together well except the chocolate chips.

  2. Add chips and stir.

  3. Squeeze tablespoons of mixture in your hand, rolling into compact balls.

  4. Place on parchment paper on a plate.

  5. Freeze. Keep in freezer until ready to serve.

  6. They’re delicious straight from the freezer, or can be kept in the refrigerator for about a week.

  7. These are great for long hikes or in school lunch boxes.
