Snowy Night Peanut Butter Balls


  • 1/2 c. carob powder

  • 1/2 c. honey

  • 1 cup smooth peanut butter

  • Shredded coconut, toasted wheat germ, or nut meal


  1. Mix well together carob and honey.

  2. Add peanut butter and mix well again.

  3. Pinch off marble-sized pieces, from into smooth balls, and roll in coconut.

  4. Freeze in a single layer. Once balls are frozen, a single layer is no longer necessary. They can be stored in a freezer bag for future use.

  5. Thaw at room temperature in a single layer for just 5 minutes before serving.
