Fruit Cookies

Preparation

Mix together:

  • 3 bananas, mashed

  • 1 cup chopped dates, packed, (softened)

  • 1/2 t. salt

  • 1 t. vanilla

Then add:

  • 1 cup chopped raisins

  • 1 cup flaked or shredded coconut

  • 1 cup other chopped dried fruit 

  • 1 cup oats 

Mix all ingredients well.

Drop by packed tablespoons on sprayed or parchment-lined cookie sheet. 

Bake at 350 for 25 minutes.

Makes approx. 40 cookies.
